Spaghetti squash is so groovy. I can’t believe there is a vegetable that can disguise itself well enough as spaghetti to be a replacement for the noodles! (except for this recipe, because I think it would actually be very strange to make a mexican style noodle bake–but that’s irrelevant). This is a delicious recipe, and much healthier than most mexican dishes. This recipe was adapted from Julie at Baked In.
First step is to prepare the spaghetti squash. It is SO much easier to cook the squash in the microwave, before I prepared this recipe I had only made it in the oven, and it took much longer, and was much harder to handle. I recommend this way!
While the spaghetti squash is in the microwave you can start the other ingredients.
Even as an entirely vegetarian dish, this meal is still filling and satisfying. Even my boyfriend loved it, and brought some to lunch the next day!
