I was looking all over the store for a low carb muffin, and much to my surprise I couldn’t find a single one. I guess since the low carb craze has died down a bit, food low in carbohydrates are harder to find…Or maybe I was just lookin in the wrong place. Either way I have decided to make my own version of a low carb & paleo muffin!
* You can easily make your own almond or flax seed butter if you can’t find any at a store. Add flax seeds to a food processor (I used my ninja) or coffee grinder until it forms a powder. Make sure you measure the meal after you blend it and not before the seeds are ground. If you are making your own almond meal, make sure you don’t blend the almonds for too long or you will make almond butter! Use raw almonds when making almond meal.
**Some paleo dieters do not consume butter, you can replace the butter in this recipe with another tablespoon of coconut oil, or grass fed ghee if you feel like it.
These muffins have about 150 calories each and only 6 grams of carbs! They are delicious with almond butter, peanut butter, or butter! They would also be tasty with jam. They are best warmed up, and with something on them. Not gonna lie, kinda blah by themselves.
I want to make a coconut version of these muffins! I think they would also be great savory with different herbs and spices. I might try to make a cheesy savory version to use for egg sandwiches. Yum!
