Peanut Butter Chocolate Chunk Scones

I used to love eating a scone for breakfast. Then I realized scones are usually very high in calories, and low in nutrients. Scones are not the best option for breakfast because they a bunch of sugar and low levels of protein. I was craving those chocolate chip scones I used to get on campus and thought, there must be a way to update those sugar rich, high calorie treats.

Even this “healthified” recipe should be considered a treat. These scones have much higher levels of protein, nutrients, as well as lower sugar and calorie counts.


Flatten dough into two 6 inch circles, make sure they are about the same thickness. Cut each circle into 6 wedges. Coat with melted coconut oil or butter and sprinkle with cinnamon sugar mixture.P1090272

These healthier scones have only 115 calories, and 6 grams of protein. Each scone has only 3 grams of sugar, 2 grams of fat, and 19 grams of carbohydrates. A much better alternative than those purchased at the grocery store or bakery. Leftovers can be frozen and popped in the microwave or toaster oven in the morning.
