Whats for dinner tonight?! How about steak, sweet mashed taters, and some pickled beets? Only if there is wine too! Sweet potatoes are full of vitamin B6, C, and potassium. Unlike white potatoes, sweet potatoes are rich sources of vitamin, beta-carotene, and they are richer in dietary fiber. But, both the white and sweet potato have similar calorie, fat, carbohydrate, and protein contents. So just substituting sweet potatoes for white potatoes does not automatically make your dish “healthier” especially not if you add brown sugar, marshmallows, or other sweet additions. I’ll take any excuse to kick winter’s rear end out of here! And beets are so healthy for you too! I have HATED beets my whole life, but these little guys are pretty good. They are homemade pickled beets, I’m sure I’ll have that recipe up this summer. Beets contain magnesium, calcium, iron and phosperous! They are also considered a fiber food and contain vitamins A and C. I think beets get a bad wrap, but they really don’t always have to taste like dirt!
And I highly recommend this wine, it was soo delicious, if you like the dry red sort. Mmm..
